Origin and evolution
“Buckled meat” is also known as tiger skin braid and oil-ripped pork. The earliest recorded pork buckle in ancient my country is “Diaoding Ji”: “Babaylan: Cut the meat into large squares and sweet sauce and cook it for 80% cooked, fry it, cut it into large slices, such as pepper, whole green onion, rice wine, and soy sauce. Use a small magnetic bowl to set it, steam it in a steamed bun, and then cover it with a bowl and put it on the skin.”
The evolution of pork buckle has developed many varieties, among which the most famous ones are Hakka plum buckle, Jiangsu pork buckle, Sichuan salty white and sweet white buckle, Jiangxi pork slices, Hunan fermented black bean oil buckle, etc. The “Three-lined pork” innovatively launched by Komiks Hotel in Luhushan won the title of Meixian District’s local specialty.

Select raw materials
The main ingredient pork should be selected with thin skin and thick pork with a thickness of 3 to 4 cm. The pork belly in this part is characterized by fat and thinness and even distribution. If the pork skin is too thick, it will lead to poor wrinkles on the surface of the finished product; if the fat and thin distribution is uneven, the meat will be difficult to cook in the pot. When choosing the bottom auxiliary materials, select three auxiliary materials, including dried bamboo shoots, tea tree mushrooms, and Cordyceps flowers, to fully absorb the oil seeped out of the pork during steaming, so that the taste of the auxiliary materials itself becomes soft and rich, while the main materials can absorb the fragrance of the ingredients.

Slice the meat into slices about half a centimeter thick according to the pattern of the meat, cut it horizontally into slices about half a centimeter thick, with the skin downwards in a bowl, and maintain the integrity of the fat meat and lean meat. Place the slices of meat in a fan shape along the edge of the bowl to reveal the lean meat part, and then use two slices of pork belly to complete the complete shape of the buckle.
Do not cut the meat slices too thick, otherwise the fat in the fat meat will not fully penetrate when steamed, resulting in a fat taste of the finished product; the meat slices cannot be cut too thin, otherwise the steamed meat slices will be difficult to maintain the complete shape.
